Whipped cream is simply that—cream that is whipped until its texture changes. Gradually blend in sugar and vanilla for an added flavor. There's no need to buy the stuff in the plastic tub if you already own a whisk or a mixer.
Ultra-pasteurized cream lasts a long time, but it tastes best when it's fresh. We recommend using it within five days of opening the package.
Whenever possible, we source from American farmers. But some products—like cane sugar, vanilla beans, and cocoa—don't grow well here, so we rely on organic fair trade producers in places like Brazil, Madagascar, India, and even Tahiti.
We love our pasture-raised milk, but when a recipe calls for milk and we want a little more richness, we freely substitute cream instead. Chefs know that fat is flavor, and cream has more butterfat than milk.
